Supplies

Step 1: Ingredients

  • 2 1/4 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 3/4 cup good quality unsalted butter (room temperature)
  • 3/4 cup granulated sugar
  • 1 large egg (room temperature)
  • 2 teaspoons pure vanilla extract
  • 1/2 teaspoon almond extract
  • Weight Converter (if you need help converting the measurements)

Step 2: Whisk Dry Ingredients

In a medium bowl, whisk flour, baking powder and salt together.

Step 3: Cream Butter and Sugar

In a large bowl using a hand mixer, beat the room temperature butter and sugar together on high speed until combined.

Step 4: Add Egg, Vanilla, and Almond Extract

Add the egg, vanilla, and almond extract and beat on high speed until incorporated. Scrape the sides of the bowl as needed and beat again.

Step 5: Add Dry Ingredients to Wet

Add the dry ingredients to the wet ingredients and using a rubber spatula incorporate the dry ingredients to the wet until just combined.

Step 6: Beat With a Hand Mixer

Then use the hand mixer to combine everything cohesively (the dough should stay together once pinched). Divide the dough into 2 equal parts. Cover with plastic wrap and form into a flat disk, refrigerate overnight.

Step 7: Flour Work Surface

The next day preheat oven to 350°F. Line baking sheets with parchment paper or a silicon mat. Remove the disks from the refrigerator and allow to sit at room temperature for 15-20 minutes. Flour work surface and rolling pin.

Step 8: Roll Out Dough

Roll dough out to ¼ inch thick, make sure there is flour on the bottom of dough, so it doesn’t stick to your work surface. If dough cracks on the edges just pinch them back together.

Step 9: Cut Into Shapes

Using cookie cutters, cut the dough into shapes. Re-roll remained dough and cut into shapes. Arrange cookies on baking sheets, make sure the cookies are not touching.

Step 10: Bake

Bake for 10-12 minutes or until lightly browned around the edges. Allow cookies to cool on the baking sheet for 4-7 minutes then transfer to a wire rack to cool completely before decorating.

Step 11: Decorate

I like the place my cooled cookies on a parchment paper to decorate them, this allows for easy clean up. I have a recipe up on how to make royal icing if you want to make your own.

Step 12: Enjoy!

Enjoy this lovely time of year with all your loved ones while making and eating cookies!
